CHAMPAGNE STYLE IPA COLLAB WITH COAST MOUNTAIN

This collaboration with Coast Mountain is a fusion of kettle sour and a Brut IPA with the addition of black currant puree. This tart and refreshing beer has bright notes stone fruit, red berries, and white wine grape must, alongside stumble floral and citrus aromas.

Alcohol Content: 7.6 ABV

Bitterness: 35 IBU

INGREDIENTS - 10 GAL.

17.5 lbs Canadian 2-Row

2.5 lbs Wheat Malt

2.5 lbs Flaked Wheat

2 oz Hallertau Blanc - Boil 5 mins

2.5 oz Amarillo - Boil 5 mins

1 oz Hallertau Blanc - 85°C

2.5 oz Amarillo - 85°C

2 oz Nelson Sauvin - Dry Hop

2 oz Hallertau Blanc - Dry Hop

 oz Amarillo - Dry Hop

5-8lbs black currant puree - End of Fermentation

1-2 pkg Lactobacillis

1-3 mL Amylo 300 - During Mash

1-3 mL Amylo 300 - End of Fermentation

1pkg Imperial A20 Citrus

MASH STEPS.

Mash In: 62°C, 90 minutes

Sour: 40°C, 24-36 hours until pH reaches 3.0-3.4
