SOUR WHEAT ALE WITH CRANBERRY PUREE AND ORANGE ZEST
We took our Kettle Soured Wheat Ale and blended in some cranberry puree and fresh orange zest. The result is a sour with classic tangy autumn flavours that blend perfectly. The cranberry and orange make this a tart, citrusy and refreshing brew perfect to bridge the gap between summer and fall.
Alcohol Content: 5 ABV
Bitterness: 16 IBU
INGREDIENTS - 10 GAL.
7.5lbs Canadian 2-Row
7.5lbs Wheat Malt
2.5lbs Carafoam
1-2 pkgs WLP693 Lactobacillus
1oz Chinook - Boil 60min 2pkg – WB-06
4lbs Cranberry Puree - End of fermentation
Zest from 1-2 Oranges - End of fermentation
MASH STEPS.
Mash: 66°C, 60 minutes
Sour: 40°C, 12-36 hours until pH reaches 3.0-3.4
