BOTTLE CONDITIONED BRETT SAISON

Second in our Graduate Series and our first experiment with Brettanomyces. This Saison is a farmhouse style that we hopped with Nelson Sauvin and bottle-conditioned with Brett. We let this brew age for three months to give us some funky and complex flavours.

INGREDIENTS - 10 GAL.

18lbs Belgian Pilsner

3lbs Wheat Malt

3lbs Vienna Malt

1.7lbs Belgian CaraMunich

2oz Golding - 60min boil

2oz Nelson Sauvin - Whirlpool

2pkgs WYeast 3726
2pkgs WLP650 Brettanomyces Bruxellensis

Alcohol Content: 6.9 ABV

Bitterness: 29 IBU

MASH STEPS.

Mash In: 66°C, 60 minutes
