DOK ANCHAN KETTLE SOUR COLLAB WITH O5 TEA
Dok Anchan or Butterfly Pea Flower is native to Thailand ad famous for its electric blue colour that changes from purple to pink as acidity increases. We add this to the whirlpool of our kettle sour, resulting in a vibrant purple beer with delicate earthly floral aroma. Cheers to O5 and the Thai farmers for this collaboration.

7.5lbs Wheat Malt

1oz Chinook - Boil 45min

1oz Nugget - Whirlpool

4.5oz Dok Anchan Flowers - Whirlpool

66.0°C, 60 minutes

SOUR.

1pkg SafSour LB1 (L. Brevis)

40°C, 12 to 36 hours until pH reaches 3.0-3.4
